What makes good espresso at home?

Espresso quality comes down to fresh beans, the right grind and consistent technique more than the price of the machine. Beans should be freshly roasted and ground just before brewing, since ground coffee goes stale within days. The grind size controls extraction — too coarse and the shot runs fast and sour, too fine and it chokes and turns bitter. Aim for a shot that pours in roughly 25 to 30 seconds. A decent grinder often improves results more than upgrading the machine. Tip: if your shots taste sour, grind finer; if bitter, grind coarser.

How do you care for a coffee machine?

Regular cleaning keeps coffee tasting good and the machine working. Rinse the group head and backflush espresso machines regularly, since old coffee oils turn rancid and taint every cup. Descale every few months, more often in hard water areas, because scale builds up in the boiler and reduces performance. Clean the milk frother immediately after each use, as milk residue sets hard and blocks the steam wand. Empty and rinse drip trays and pod bins. A machine cleaned regularly makes better coffee and lasts far longer than a neglected one.
